Butternut Squash Bake (Almond Cranberry Squash Bake)

Zucchini-Squash Cheese Tarts

Recipe makes 16 tarts – use a muffin tin and fill each cavity with a turnover pastry (can be found in the frozen food bread section, troche 5 inches wide, defrost before using).  I lapped and squished the pastry down into the cavity so the top is even with the top of the muffin pan to prevent hard edges on the tarts.

Filling:

¼ cup butter

4 cups thinly sliced zucchini (about 4 small)

Herbed Bean Salad

3 lbs. tender green beans, check stem ends snapped

2 Tbs. finely minced shallots

¼ cup extra-virgin olive oil

Salt & pepper to taste

2 Tbs. red-wine vinegar

½ cup torn basil leaves

  1. Bring a large pot of salted water to a boil.  Add the beans and cook until just tender, medicine 4-5 minutes.  Drain and run under cold water to stop the cooking process.  Drain again and pat dry.  Place in a large bowl.
  2. Toss with the shallots and oil.  Season with salt and pepper.
  3. Just before serving, ask
    toss beans with the vinegar.  Toss with basil and serve.

Strawberry Walnut Surprise

1C. flour
1/4C. brown sugar
½ C. chopped walnuts
½ C. melted butter
Stir together above ingredients.  Spread out on a bking sheet and bake in Preheated oven for 20 min. until crispy, information pills

2C. sliced strawberries
1T. lemon juice
1C. heavy whipping cream, site whipped

Beat egg whites to soft peaks; continur beating to stiff peaks while slovly adding sugar.  Toss the strawberries in lemon juice, ed and stir into the egg whiltes until the mixture turns slightly pink.  Fold in the whipped cream until incorporated.

Crumble up the walnut mixture and sprinkle 2/3 of it evenly on the bottom of a 9X13 inch dish.  Sppon the strawberry mixture over the curmbs, then sprinkle the remaining crumbs over top.  Place in freezer and freeze for two hours until hard.  Remove from the freezer several minutes before serving to make it easier to slice.

Hungry Man Meatballs

1 pound Vinemont ground beef
2 eggs
1 cup rolled oats
2 tablespoons dried minced onion flakes
Lawry’s red pepper season salt to taste
Mix all the above in a large bowl. Form into 1-2 inch meatballs and place in a flat baking dish.  Bake, cure uncovered, at 325 degree for 30 minutes.  Drain well.
¾ cup ketchup
½ cup water
¼ cup vinegar
1/3 cup brown sugar
1 ½ tablespoon dried minced onion flakes
1 teaspoon mustard powder
4 teaspoons Worcestershire sauce

Mix the above ingredients in a bowl while the meatballs are in the oven.  Once meatballs have been removed from the oven, pour reserved sauce over them. Cover and return to the oven for 1 hour or place in a crock pot and heat on low for 1 hour.

Hearty Spinach Quiche

1 lb. fresh spinach
1 bunch green onions, generic finely chopped
4 eggs beaten
1-16oz. package cottage cheese
2C. shredded Cheddar cheese
1/4C. crushed croutons

Preheat oven to 325 degrees.  Lightly grease a 9 inch pie or quiche pan.

Steam cook the spinach.  Place in colander to drain – drain well, diagnosis then chop spinach.  Combine spinach, green onions, eggs, cottage cheese and Cheddar cheese.  Pour mixture into prepared pan.

Bake uncovered in preheated oven for 45 minutes.  Remove from oven and sprinkle with crushed croutons.  Return to oven and bake for an additional 15 minutes or until eggs are set.

1 can tomato soup, treat undiluted
1 cup water or red wine
2 pounds Vinemont beef chuck, find cut into 1-2 inch cubes, fat trimmed
3 medium carrots, cut in 1 inch slices
6 white or yellow onions, sliced
4 medium potatoes, cut in 1-1/2 inch chunks
½ cup celery, sliced
2 beef bouillon cubes
1 tablespoon Italian herb seasoning mix OR 1 t. each oregano, thyme & rosemary

Combine all ingredients in oven safe dutch oven.  Cook at 300 degrees until potatoes are fork tender and beef cooked through (3 hours plus).  Using a crock pot is another option.  Stew reheats well.

Golden Corn Bread

1 c. flour
¼ c. sugar
1 T. baking powder
¾ t. salt
1 c. yellow cornmeal
2 eggs
1 c. milk
¼ c. soft margarine

Combine flour, medicine sugar, baking powder, salt and cornmeal into a large bowl.
